brownies

Indulge in the classic comfort of brownies—rich, fudgy, and irresistibly chocolatey. Perfect for any occasion, these timeless treats combine a crackly top with a dense, moist center, delivering pure bliss in every bite. Enjoy them warm with ice cream or as a sweet snack any time of day.

Brownies are a quintessential American dessert, believed to have originated in the late 19th century. Legend credits their creation to a resourceful chef at Chicago’s Palmer House Hotel, who sought to craft a portable cake for ladies attending the 1893 World’s Fair. Today, brownies are renowned for their rich chocolate flavor and signature fudgy or cakey texture.

Preparation is delightfully simple: melted butter or oil is blended with sugar, eggs, and cocoa powder, then folded with flour and sometimes nuts or chocolate chips. The batter is poured into a pan and baked until a shiny, crackled top forms, while the interior remains irresistibly moist.

What makes brownies especially interesting is their versatility—variations abound, from chewy to gooey, with additions like caramel, peanut butter, or fruit. Their universal appeal and ease of customization have secured brownies as a beloved treat across generations and cultures.

This brownie recipe from Cafe Delite is very easy, requiring only one bowl and quick whisking steps, with the only tricky part being careful not to overmix the batter. The resulting flavor is profoundly rich and intense, thanks to the double hit of unsweetened cocoa powder and melted chocolate chunks throughout the mix. The texture lives up to the name, featuring a desirable crisp, crackly top that gives way to a dense, ultra-gooey, and chewy fudgy center.

Ingredients

  • 1 cup (225g) unsalted butter, melted and cooled
  • 2 tablespoons vegetable oil
  • 1 ¼ cups (250g) white sugar
  • 1 cup (220g) light brown sugar, packed
  • 4 large eggs, at room temperature
  • 1 tablespoon pure vanilla extract
  • ¾ teaspoon salt
  • 1 cup (125g) all-purpose flour
  • 1 cup (100g) unsweetened cocoa powder, good quality
  • 7 oz (200g) large chocolate chips or roughly chopped chocolate

Directions

  1. Preheat oven to 175°C | 350°F. Lightly grease an 8×12-inch baking pan with cooking oil spray. Line the pan with parchment paper (or baking paper) and set aside.
  2. Combine the melted butter, oil, white sugar, and light brown sugar in a medium-sized bowl. Whisk well to combine.
  3. Add the eggs and vanilla extract. Beat until the mixture becomes lighter in color (about one minute).
  4. Sift in the flour, cocoa powder, and salt. Gently fold the dry ingredients into the wet ingredients until just combined. Do NOT overbeat, as this will affect the fudgy texture.
  5. Fold in ¾ of the chocolate pieces (chips or chopped chocolate).
  6. Pour the batter into the prepared pan, smoothing the top out evenly, and top with the remaining chocolate pieces.
  7. Bake for 25-30 minutes for just under-done, fudgy brownies, or until the center of the brownies no longer jiggles and is just set to the touch. (For well-set and firm brownies, bake for 35-40 minutes.)
  8. After 15–20 minutes, carefully remove the brownies out of the pan and allow them to cool completely to room temperature before slicing into 16 pieces. They set as they cool.
